White peppercorns are black peppercorns with their outer skins removed. Used in light colored dishes (white sauce) when only the flavor and not the color of black pepper is desired. Slightly less bitter tha blacl pepper. When ground, whole white peppercorns become a white or very light gray powder. Storing peppercorns in whole form and grinding at the time of use maintains optimum freshness and flavor.
